First off, these were the spareribs from Costco so they had the skirt and everything still on them. I kinda, sorta knew what I was doing trimming them up....they ended up trimmed perfectly I took the trimmings and smoked those for an hour, and then wrapped in foil for another hour (Gadzooks, those things soak up the smoke) Absolutely delicious appetizer for me and the Mrs.

I smoked the spareribs for 3 hours then wrapped for about and hour and a half. Glazed 1/2 the ribs with some bbq sauce and left in smoker for another hour. (Wife likes "saucy" ribs). Great ribs!!! I think next time I'd leave them in foil even a little less amount of time...but I can't complain, everybody was giving me rave reviews.

Jeff, i've never done spares before, could you splane how you trimmed them.
