FMF Mix. 400g hard red and 100g hard white.

1 hour autolyse no starter or salt yet.

Will mix in 10g kosher salt and 100g fmf starter.

I put the salt on top of the cover so I dont forget it....Yikes.

“Fresh” - I was perhaps mistakenly told ( read it) not to use just milled flour. On top of a lot of things I thought I knew, is this wrong too?
