Planning to make the duck sausage this weekend and dont have but 1 day to deal with this, so can I stuff in the morning, let it sit/cure for a few hours, then smoke it the same day. Just wondering if I can get away without letting it cure all night.
Thanks,
Joe

I will try to dig out "the book" and see if there is a official answer. I have always mix all ingrediants and let them rest over night more for flavor than cure.

I also thinks it stuffs a little better as well.

The short answere is yes. I air dry anouille 45 minutes and then smoke. It is cured with TQ per the recommended measurements.
