Smoked pork picnic with Qview running commentary

     Hello everyone! Doing a 4# picnic half today.
    night I skinned it, leaving as much fat as I could on it.

    last night put it in a brine: water, kosher salt and some of Jeffs rub.

    Pulled out of brine this am, patted dry, and appied Jeffs rub.
    Into the MES at 10;30 this morning. 225* with hickory and apple chips.

     2hours in,put Maverick probe in- IT is 135*, nice color. Also doing twice  baked taters and collared greens! Need to start prepping them. Be back in a little while.

    in, IT at 144. Spritzed with 3 parts AJ and 1 part rum. Will spritz every hour to create good bark. Saw that in a post by one of the regulars here, wish I could remember who so I could give him credit.

    Had a little time on my hands- Prepped up some ABTs. Cream cheese mixed with rub, wrapped in prosciutto. The prosciutto really crisps up nice- if you like prosciutto. Got to prep my twice bakeds now. Later!

    update! 5 hours in and IT 172- in a stall right now, But boy she's pretty!

    Prepped the twice baked potatoes- mixed with salt, pepper, sour cream, ricotta cheese, a little butter, and a little cheddar. Stuffed back into skins and topped with more cheddar.
