I had a half day because of Good Friday so I figured I would get a head start on Easter cooking.. I bought 4 lbs of fresh kilbasa and put it on my mini WSM with some awesome wood that was made from an old wine barrel soaked in red wine.. 2 hours at 250 and the IT hit 160.. It smells amazing..
