Richie that is some fine lookin sausage! So how did the daughter's boy friend handle stuffin sausages? You didn't let him get around the smoker and then walk around your daughter smelling like that good smoke! Thats like waving a red flag IMHO. <chuckles>

I have no idea other then leave it out,my fresh is made without it and it is good.Man those look awesome. I could finish off a lot of that. Is there anything that is 0 carb that could be substituted for the dry milk? I see that in a lot of lunchmeat and hot dog recipes as well.
Dry milk is for moisture. Maybe add STTP.?
Adam That is a good point since the butts I used were so lean it really did help with this batch.Thanks for bringing that up.if their is enough fat the NFDM is not needed.
