Smoked Chuck Tacos and Enchiladas

nice looking food there. it's hard to find , and afford, a nice thick chuck. I miss they days where you could pick them up for $1.99/lb. they disappear fast down here when "on sale" typically used for Latin fare.
Many thanks fx! I agree on the "discount" chucks..... This on was on sale for 4.99/lb... although not 1.99, it sure does stretch out and still way cheaper than most everything else.... However, I do know that a round of tacos at the local place would have been WAY more!

My task was the rice…..onion, Serrano peppers, garlic, butter

The spices….the dry blend is dusted version of the hydrated peppers for the salt.

Finished with t-paste, stock, white wine v, and mor ground pepper dust…..

Into the rice along with some chopped cilantro….just yum!!! As an fyi this is how Gorgon Ramsey does his cilantro lime rice, so my wife subbed in the Spanish flavors….makes it perfect every time

Man oh man we love beef chuck at our house!
 
Those are some mighty fine looking takoes Civil, and that beef looks perfect.
