Smoked Chuck Tacos and Enchiladas

The wife wanted some smoked chuck for this weeks meals so she scored a monster one….. I tossed it on the RT 1250 at 7:50 this morning…..I seasoned it up with kinders green chili rub.

I let it run for almost 7 hours then in a foil boat to braise….INT is 155, this thing was 3.5 inches thick!

It hit INT 205 @ 4:30 so it went into the house oven at 145 till dinner planned at 6:30.

Just a few tacos with a roasted JP and GO and cilantro lime rice….

Nice work Civil, some top notch stuff! I’d devour a couple of those for sure. Big Kinders fan here, I will have to look for that one!
 
Damn, that looks awesome!!!

I live 5 minutes from the original Kinder's, and within 15 minutes, I can be at, at least 6 of Kinder's local stores, and I've never seen that rub before. It's not even on their website, and I know it's not at their main store, because I ate lunch there a day or two ago. I love Kinder's old slogan that they had on their tee shirts and hats, it read "Kinder's meats, you can like our chops, but you can't beat our meat". I'm not sure if they sell them any longer, next time I'm there, I'll ask.

Question, is the G.C. rub spicy? Or more green chili flavor driven?
I absolutely love Mexican food, and real homemade chili verde is among one of my favorites. I eat Mexican food at least twice a week, if not homemade, it's made by little Mexican ladies that cook for local Mexican joints around here.
( I do live in Mexico Norte/ NorCal).

But my wife can't handle too much heat, so before I do a deep dive into searching the stuff out, I'd be curious to hear what you think about it.
So far all I've seen online are the small single meal packets and the 8oz jars, I normally buy the 24oz bulk jars when I buy their rubs, gravy, or taco seasoning.

I use this stuff a lot, everything I've tried from them has been really good, but the green chili is my favorite. (It's too spicy for my wife though.) I wish they made a mild version, so I could adjust the heat for her, I like the heat level, it's not hot, it's spicy.

Well HECK YEAH!! Haven't done any tacos in far too long and that has to change soon. I have a chuck in my freezer and now have a plan for it. Love the idea of the roasted/grilled green onions. We do that with most of our fresh vegetables, but have never done green onions so I'm stealing that idea. I also have never heard of or seen that Kinders rub. Excellent work!!

Thanks Dan, this is the Kinders seasoning, it isn't hot but a little tangy like salsa verde.

My son does the GO's, he makes a little foil boat then adds a little soy sauce, lemon juice, spices and butter, then on the grill in the boat and once soft do a quick hot sear. We use the "hot sauce" to put over the rice and dress the tacos. I posted a pic of the kinders above!

Hell Yeah! Those look killer. Love how you melted the cheese. That chuck would make a lot of taco's!
Thanks Brian, oh and yes the melted/toasted cheese keeps the shells from getting soggy and you get that toasted cheese tone (yum). Oh yea it was the size of two chucks....had to break out a bigger foil pan to boat it.

They grill Ball tips and sell sandwiches at lunchtime, one of the first Kinders in the area is right across the street from the refineries. They grill them over oak wood, they are so good.

I will hunt some of this stuff down.

Hard to say but would be interested in what they say and how they distribute certain types of seasonings. Our Costco carried the buttery steakhouse for a while then stopped, but I wished they still did cause we are addicted to it.

nice looking food there. it's hard to find , and afford, a nice thick chuck. I miss they days where you could pick them up for $1.99/lb. they disappear fast down here when "on sale" typically used for Latin fare.
