This meal was a holy smokes this is on a quick sale…..guess we are doing smoked chuck! This one had some nice marbling!

Called it down and in the fridge for a dry brine session!

Dropped in the sand kinders green chili rub and in the RT 1250 @ my go to 265….

6 hours later it was time to wrap….the taste test was yum!!!

Ok this is where is spaced it and forgot to take pics……I put in a foil pan (INT 170) with braising liquid that was under it when it was smoking….pulled it at 205 and rested at 140 for 2 hours till dinner….

Mrs C made her 3 chilli pepper enchilada sauce and the boy made Spanish rice….

Yes sir, I am sure that was a great meal. I have done pulled smoked chuck roast, but usually smoke a pork butt and freeze some for later in thin quart zip bags for tacos, nachos, enchiladas, sandwiches, or to just eat in a little pile. For my enchiladas just use canned sauces with cheese for baking the oven, then cheese and add singe fried jalapenos and onions as a topping. I will need to try making my own sauce like yours sometime. Thanks for sharing.

We usually do a green sauce pork enchiladas and Mrs Civil has spent many years attempting and finally perfecting her enchilada red sauce to which the fam gets to be if it from!!!

Here is a post were I detail the sauces….i didn’t show it but she added dryer ground pepper dust from the 3 peppers into the roux before the blended peppers are added. This post also shows the rub I used

 
Looks great! Gonna need some of the green chili rub over here. @civilsmoker need help finding. Looked on Amazon and Googled and its not coming up. AI says they make it but I might not be 100% today...

Thanks sandy! We got it at TJ’s so I think it was a clearance….we have been looking for it and have had no luck….. the Tequila Lime is close to it

Wow those look killer! I got enchiladas on the mind. Thinking of using that Member's Mark White Queso Dip from Sams somehow. It pretty darn good Queso.

Much appreciated Brian and we often do Queso dip with these Mrs C makes some with white American and we it usually gets added inside the enchilada and some over the top under the grated...It adds a different tone to it but is very tasty that way!

Thanks Keith and oh yea we use Tequila lime on beef all the time, especially with skirt, flank, and flat iron.
