Chicken thighs and drumsticks smoked to our liking
3hr smoke with apple/maple chip combo @ set temp of 250
It’s a slow cook but worth the patience
Fresh Chicken or thawed, season with a poultry blend, all seasoning, garlic-Parmesan blend, brown sugar bourbon blend and or whatever your heart desires blend.
Get smoker fired up and prep (5-10 min of total time)
Season em, pan em and rack em
15 min later drop first round of chips...that’s close to half hour mark
First picture is at around the first 1:15 mark. I pull the chicken, drain excess juices and rotate(flip the chicken). Let cook another 45 minutes
That’s about 2 hours into the smoke
If you want to add BBQ sauce, During the last 30 minutes Pull the chicken again, flip back over and add whatever your favorite BBQ Brand is. If you just want good old seasoned chimkin, just let er keep smokin
Rest time, the time it takes to get it to the table and 😉
Oh, and forgive the fine flatware 🤣

That is a delicious looking meal!
I smoke thighs in a pan too, but with a little broth in there with them.
Then use the pan juices to make gravy.

Chicken looks good . That's an interesting MES . I've never seen that vent / controller set up like that .
 
Looks real good. I typically do chicken in a pan with little pats of butter placed throughout.

Mostly to capture the juices, less mess in the catch pan. I’m still a rookie in most circles..lol
Thinking of racking my next smoke with pans under to catch and see how that goes. Will certainly post results 🥃
 
Chicken looks good . That's an interesting MES . I've never seen that vent / controller set up like that .
If I have one complaint is my vent/controller...the picture is as closed as I can go and the widest I can open is one more triangle for half open. Reviews from some on this MES have some saying they don’t get enough smoke.
I get plenty of good smoke as long as I stay on top of my water and wood chips
