Brined Two 8 lb birds in 50-50 Brown Sugar and Kosher Salt.. and 1/4 cup garlic powder fo 4 hours.. dried them with paper towel . Spatchcocked then sprayed with olive oil and used my goto rub( Thanks Jeff)
WSM set to 240 Cherry and Hickory
Placed a bed of dill, rosemary and basil on the grate then the birds on top of the nest!!
Will check in 1 hour
 
Never thought to put herbs under the chicken!
Can't wait to see how this turns out!

So as long as I have the room , I threw on half a dozen eggs for 45 mins and now I’m cold smoking them using my amazing tube and some cherry pellets
Smoked egg salad for lunch!!

Apple’s predictive text doesn’t know my Southern drawl at all! Android was always spot on. Damn iTunes has my family hostage. Our escape attempt failed. I hate apple but I cannot escape!

Here is the recap
Two birds brined in 50-50 Brown Sugar and Kosher Salt with 1/4 cup garlic powder. Smoked for 5 hours at 225 with cherry and Hickory.
Pulled and mixed with honey .. made into Enchiladas with cheese
 
Nice job lemans, I'll have to give the enchiladas a go someday soon.
