Smoked Chicken with Red and Green (Christmas style) sauce

It's that time of year for fresh new mexico green chiles. I smoked some chicken so now to make some chicken enchiladas! Made a plate of green with eggs over easy and bean chalupa. Going to make christmas style enchilada casserole for dinner. Will post picture of the casserole when i'm done.

No not really. Asado is a South American thing. Carne Adovada is a South Western North American thing. Still alive in New Mexico and South West and Central Colorado. Here is a link to one way I make it. I was making Barria tacos here but still made the carne adovada.

The ingredients seem similar, this is what you’ll get if you order asado or an asado burrito from where I’m from SE NM. I’m definitely trying those tacos out too!
