I cooked two Huli Huli chickens yesterday so I would have plenty to make this dish.
I tore almost half the chicken into small bit sizes. Then I added two cans of cream of mushroom soup, half a can of sliced black olives, half a can of diced green chilies, half a jalapeno finely chopped and the same amount of green onions. I also added sharp cheddar and mozzarella cheese.
I placed tortilla chips on the bottom of a china container, then the mixture and piled on more cheese.
I placed it in the smoker at 275* for two hours.
I had it with a side of the macaroni salad from last nights cook.
