Was in one of my favorite stores looking for something out of the ordinary to smoke and saw this 'in the bag' tender reduced to $9.45 and in the cart it jumped. Took it to work to do the peel and trim and while it wasn't the prettiest tender I ever saw I figured for 9 bucks it was still worth it. I know some think it's a sin to smoke them but it was on my list of things to do so I felt it was my duty to complete the mission. Tucked the tails under with a few quick ties, gave it a modest slather of thick whoosy and kept the rub simple with sea salt, black pepper, granulated garlic & onion. Another windy, rainy afternoon in Western Oregon so even with the MF gasser on high I could only get to 250, but it held steady. Coupla fat chunks of cherry wood for TBS and in it went. About 2 hours and 15 minutes in the IT was 136 and I pulled it. I wanted to let it rest longer but Andrea, my SO, was on my a** about 'when do we eat?' so it only got about 15 minutes while I finished smashing the Yukon Gold spuds up with the garlic spread and butter. All in all, felt good with the outcome....melted in your mouth, juicy and great flavor. Another sucessful smoke thanks to the SMF....
