Smoked a Chuck, 14.5 WSM, PartyQ, Dry water pan

this turned out pretty good!  10 hours on the smoker and 2 in the cooler in foil.  Here is a before, before and after.  Did a little dry brine over night, then BBQ Rub, and pecan wood.  Kinda wanted it to be smokier, but I used my 14.4 WSM, with no water in the pan with a PartyQ and not all the coals were used and thus some of the wood i stuck in them didn't smoke up either.  That set up uses so much less fuel I am still adjusting.

Chuck looks great.

Longest cook I've had on my 14.5 was 14 hours. There was still enough fuel for several more. I dry smoke and use the side light method for lighting my fuel. No pit tender.
 
Good results with that smaller cooker.. Like my Brinkmann, or ECB, they use less fuel. Just did 14 hours on it and still had coals. I think I used 7 lbs for the brisket. Blue Bag Kingsford. I did shake the coal pan twice to let some ash fall . [emoji]128077[/emoji] have fun!

Very nicely marble distribution.

In our neck of the woods, regular price at $6.39.

In our case, this particular cut ( any kind of "Chuck Roast" ) for whatever reason never goes on sale.

I did get "Arm roast" today @ $2.99, on deep sale,  best it gets here, nowhere near as pretty.

I am lucky to have a killer butcher about 5 minutes away.  they have great meats and will cut just about what ever you want (if you are a regular and I am :)).  This chuck was perfect for smokin!  I think they normaly run about 3.95/lb too.
