88 cent a pound roaster chickens this weekend. 2 big games on Sunday . That's all the excuse I need to get the smoker out!
Technically , this was a beer can chicken , but A. It was a diet coke can and B. it was empty...These days I just use the can for stability and I gave up on liquids in the can a while ago. This chicken was liberally coated with salt and pepper and smoked for just over 2 hours on the WSM. No water pan , bird on the top rack.300 degrees the whole time.
As usual , the chicken was incredibly moist and delicious. I like the upright roasting method a lot. I feel like the chicken gets cooked perfectly even all over.
