Decided to make some ribs today and test out some new rubs I got ...smoked at 250 used sucklebusters hawgwaller and sweet swine o mine rub... made 2 racks of St. Louis style and one spare ... I also made Oklahoma joes beans with out meat. I used apple and cherry for the ribs and one piece of cherry and one mesquite for the the beans ... ribs were cooked with the 321 method removed when they probed easily. I sauced the ribs with three little pigs BBQ sauce ... beans recipe
1 28oz can baked beans
1 can black beans
1 can red beans
1 green pepper
1 red pepper
1 red onion
1 jalapeño
2 cups brown sugar
1 small bottle honey BBQ sauce
2 tbl spoons rub

7 of us ate and everyone liked the sweet swine rub better then then the sucklebusters... to be fair they were all sauced so maybe the sucklebusters rub just didn't go with the sauce as well as sweet swine.
 
First time making these beans ... when I read the recipe I knew they were going to be sweet ! I was going to adjust the amount of brown sugar from the start but I always try to make a recipe the way it was intended the first time even if I think it doesn't sound right! This time I would have been right . Cut the sugar in half .. if u like sweet stuff use 2 cups of brown sugar ... by all means these were very very good but next time they will be amazing !
 
Ribs and beans look great. Bones have a nice pullback and the beans look off the chain. I can see how they might be too sweet for some folk. But I really the contrast of the different beans and peppers. I can almost taste them. Of course I like sweet beans and spicy beans. Just depends what they're served with. I once had beans that I swear were cooked down with apple pie filling. Looks like you had a great meal! Points!!

That is an excellent looking meal!

If you didn't do it this time, put the beans under the ribs in the smoker, so the juices drip in the beans.

It kicks the flavor up a notch!

Looks fantastic! I'm always looking for new bean recipes. I actually just put some in that I just winged it on the recipe. I usually come out pretty good just adding things I think will taste good. Lol. We will see in a few hours I guess. Also have a pork butt rolling now coming up on 8 hours. I'm gonna eat well tonight!!
