Hi, I live in N/W Indiana and I have made my own sausage and hot smoked it.  What I would like to do is try cold smoking things. Maybe a whole hog and bacon and things of that nature. Would building a walk in cold smoker be a wise thing to do in my area?  I am about 35 miles south east of Chicago. 

Does anyone have plans. I have no Idea on how to build a smoke house or even use one. I have a homemade stainless steel horizontal smoker with a rear attached fire box. Your thoughts please.
