Well it's Tuesday evening already & since I haven't smoked anything since yesterday evening I figured I'd better get on the ball & smoke something to eat...

I settled on a nice piece of pork loin that I needed to use or freeze

Here is the loin waiting for rub.


I gave it a nice coating of rub.


& in the MES it went. Running the AMNPS with oak & apple.

Now to figure out what to make with it

I knew there was a reason the price of pork has been going up again! I would do some smoker roasted veggies. Or smoke a whole cauliflower. Cover it with mayo, mustard, and a good rub. Throw it in there. When it's close to being done top with grated cheddar, and pepper jack (smoked of course)!!!
 
As it is you making it, the sides better have garlic.

  I got the MES at Gander Mtn on Thanksgiving last year for the Black Friday sale - I make it earn its keep for sure!

  My camp taters have plenty of garlic in them

  I grate some onion & press a bunch of garlic in a container then put the potato wedges in, put the lid on & shake them to get them coated nicely...
 

Just out of the smoker at 145 IT & ready for the rest.

When the loin was close to being done I fired up the CharGriller & got the camp taters & corn ready.


Here are the camp taters & you can see plenty of garlic

& here it is plated with the honey mustard sauce.

I make my own honey mustard sauce & just made some over the weekend. I decided to try using it as a dipping sauce for the loin & it was quite a good combo

  This really was a good meal - super tender, moist, smoked loin with grilled corn & spicy camp taters - perfect choice for a Tuesday evening

This is another dessert I make that is really easy & only takes a couple things.


Dark chocolate makes it very rich & satisfying - a nice ending to a good meal
