That sounds amazing. Since it only rarely gets to 34 where I’m at looks like I need to convince my wife to let me get another garage fridge. You know, for science and meat and stuff.

The middle ground approach is to smoke low or no heat for a couple to 3 hours and then on a hot grill seer it up. Not a super long cold smoke but best we can safely do :)

If I'm back in that area I'm for sure eating there and getting bison burgers from Ted Turner's Buffalo Grill. Wish we had that burger joint in TX. Only a few were around the country but another amazing home run as well!
