Older daughter wanted burgers yesterday and I kind if thought smash burgers sounded like a good idea, been a long time since I made them.
80/20 ground beef ground in house from grocery store, mushrooms, Vidalia onions, lettuce and tomatoes American cheese and Swiss cheese for variety. Wife opted for a classic double using raw onion, daughter did similar but with swiss and cooked down onions I made with a little butter and beef tallow salt and sugar and I went mushroom and Swiss with butter tallow and a little Daily Grind second sandwich added a Little Malindas Black Truffle. I don't have a burger press but recently got a tortilla press so used the scale I got for Christmas to make 2oz balls and pressed between 2 pieces of ziplock then onto a cutting board covered with plastic wrap little sprinkle of Daily Grind and into freezer for a while to get a little stiffer to handle and get the onions and mushrooms going. Made a mess on the stove top but it was worth it, next time I will not be do lazy and get the small Blackstone out.
