My father-in-law gave me his Kamado Joe last year (love that man) and I did one brisket on it late 2018 and it came out a touch dry. This year I added a water pan and it seems to making all the difference in the world!

I got up at 3 am today to fire up the Joe with the BBQGuru DigiQ (did I tell you I love him?) he also gave to me and set it to 225 degrees for this 10 pounder that lost a couple upon trimming. Right now it is foiled at 179 or so and allowing it to cruise up to 200 before I pull it and wrap it up for a nice warm summer nap. Porn to com later.

Good looking brisket nice cook! Looks like you got a nice setup there as well.

Damn I wish my father in law was nice and would give me a kamado joe lol
