Got this recipe dialed in and thought I'd share for those interested. The wing sauce is using the base of a recipe I found elsewhere, however I cut out a few ingredients and added a few of my own, so I'll call it my recipe from now on :).
These wings are great for those who like BBQ flavor but also a bit of a kick. The first flavors are all BBQ, but the heat builds gradually on the back end - hence the name "slow burn" honey bbq.
Photos below, and the recipe below that for any interested. They were every bit as good as they look. I will probably lower the spice next time my wife is eating as the heat eventually got to her, but for me as a lover of spicy food it was the perfect amount.
After 2 hours on the smoker, before sauce/grill:

RECIPE: Slow Burn Honey BBQ Wings
Season wings with EVOO, salt, pepper, garlic powder, paprika, chili powder
Smoke for 2 hours at 225 with Apple or Peach wood. Toss with with sauce, then crisp over hot grill (400-450) for approximately 5 minutes, turning frequently and taking care not to burn.
Sauce:
1 cup BBQ sauce
1/2 cup honey
4 TBSP butter
2 tsp cayenne pepper (adjust lower for sensitive palates)
1 tsp kosher salt
1/2 tsp garlic powder
Combine ingredients in small sauce pan over medium-low heat. Keep warm until needed. Makes enough sauce for approximately 2 dozen wings.
