I usually use collagen casing when making my Slim Jims but they always seem to come out with tough casing. So this time I used sheep casing. I use sheep casing when I make breakfast sausage and have no problem stuffing. But using them this time was a real pain. I think the meat was too dry and I should have added some water to the mix before stuffing. But I tell ya, they came out great. Collagen casing are alot easier but I think I will us sheep casing from now on. Just the right bite. Still need to work on the recipe but at least I got the casing right were I like them. Sorry no pictures, I had a mess on my hands. Besides my wife was away so I had to get things cleaned up before she got home. She always says I make the kitchen a mess. So I guess, "when the cats away the mice will play".:D
