Did this awhile ago . Trying for a tender slice of smoked chuck . Worked out pretty good . Just thru this on the 14 wsm one day with some mesquite . No other meal items .
This time I tied some butchers twine around the center ( on the side ) to keep its shape .
On a rack in foil pan . Took to 165 then beef broth and covered pan with foil .
It was probe tender at 211 internal temp .

I liked it more like this than shredded , just not sure if I got lucky with the tenderness .
My opinion is alot of it depends on the chuck you have .
This was a good one .

Looks real nice! Ive never done a chucky sliced usually pulled. Was thinking about trying to smoke one and finish in the SV but looking at yours I may just try it on the UDS. Nice job!

Looks good chop! I haven't done one sliced either always pulled but might give this a try. I think a SV bath would help with the tender factor you are looking for.

Looks great Rich! We don't like pulled/shredded here and prefer chunks. I think there are 2 keys to chuckies and you nailed em both. First, is to pick a chuck with good marbling/like a good steak and also take them high just as you did. Tied up like that looks like prime rib! Totally doing that. I don't care that it just for looks but that smoke ring looks killer! I have one on deck that is headed for a bath but this is making want to change course. :emoji_laughing:

looks great from here, chuckies are my favorite cut of beef, I would take a piece of chuck roast over a steak any time. but that's me.
