Sliced Butt

Hi Al

l I was wondering if I wanted to smoke a Pork Butt with the blade bone in? How would the smoking differ from a Butt I was going to pull.I know PP has to  go to 200#, what if I wanted to slice the butt? I did a few Butts for PP, never a problem..Going to be a small butt 4/5 lbs for me and my wife..

No difference except for IT. As u stated take up to 195+ for pulling. To slice/chop Id go up to about 170.  At 160 its cooked but I go just a lil extra....

I usually go to 180º IT for slicing, but i also let it rest for 3-4 hours.

OK then 180 it will be. Smoke for a couple of hours, then cook till 180.Sounds like a plan

Just wanted to say thanks for the Idea, been looking for things to smoke in my mini-WSM, sliced Butt might be just the thing.
