Skirt steak

With all the flank steak I've been doing I decided this time around to do a skirt steak as it was on sale and I'd never smoked and reverse seared one before.Wow is all I can say.it was so tender and juicy.I think I actually prefer it over flank.The only seasoning I used was spog.My only regret was not taking any pics until it was on my plate.

Looks delicious. I prefer skirt over flank as well but both have their place. Usually use skirt for fajitas

I smoke to an IT no higher than 120 then sear till Medium Rare

For steaks I generally go to 110°-115° then sear.

But I'm not sure I've ever actually reverse seared either Flank or Skirt steak.
They almost always get marinaded and slapped on a hellishly hot grill for some charring.

I prefer flank steak, but yours is making think about doing a side by side. That is if I can find a couple that are affordable.
