With all the flank steak I've been doing I decided this time around to do a skirt steak as it was on sale and I'd never smoked and reverse seared one before.Wow is all I can say.it was so tender and juicy.I think I actually prefer it over flank.The only seasoning I used was spog.My only regret was not taking any pics until it was on my plate.

I prefer flank steak, but yours is making think about doing a side by side. That is if I can find a couple that are affordable.
