Is there a guideline for the size if s turkey breast given the size of the whole bird? I have a smaller smoker (SmokinIt 2D) and I'm considering buying a big turkey then removing the breast meat and smoking it boneless - I can't really fit a big turkey carcass in there.

Is this a good idea?

If you want to only do the breast I'd buy a Bone-on breast. They smoke up nice and are usually in the 5-7 pound range.

You should be able to fit a 12-14 pound whole turkey in your 2d looking at the interior dimensions. That's as big as I'd smoke even in a big smoker.

Around here, turkey breasts by themselves tend to cost 2 or 3 times per lb of the price of a whole turkey. I've separated the two before and used the rest for soup, or even smoked separately, which you could do if you have a second shelf. Just remember to use separate temp probes in each.
