Got this at Winn Dixie..9 pounds..

Havent seen choice there in a while..so I snapped it up...

Let it spend a day covered with SPOG and then into the wsm at 225 with pecan for the smoke..

Took the better part of the day to get to 132 IT...then wrapped in foil and into the fridge til today..

Got out the "Mother Of All Slicers" (it lives on a cart..too heavy to carry) and sliced it paper thin.

After taste testing ended up with 7 pounds sliced and bagged..

It turned out awesome!!!  Tender and juicy...

That interior is Perfect! that is one pretty hunk of meat...Sirloin Tips were on sale a few weeks ago but I passed not being familiar with the cut...Judging from yours, that is not a mistake I will make again...JJ
