Here's the final product. Began with a nice piece of meat from Bisher's, our local good butcher. I picked up some rub for beef at Bisher's also, and took it easy since last week's experience using an 'Emeril' rub was a bit salty.


Just starting out. About 3 hours in I put a handful of whole coffee beans into the reservoir. Read about that idea and liked it. The meat turned out QUITE nicely. Possibly the best meal I've ever made, and I've been cooking for a LONG time.

Next project: a brisket. Although the idea of smoking some baby back ribs for the 4th of July is certainly appealing!

Smoked another sirloin tip roast yesterday. This photo is of a reverse sear, first time I've tried that and it's DEFINITELY the way to go! I think I've got the hang of things. Going to look into a brisket next time out.
