Last night I smoked a 6 lb Sirloin Roast for the family.

I put it on the WSM at 250 deg and ran it till it reached a IT of 125 deg.

Then I put it on my weber grill to do a quick sear on the outside to get a bit 

of char on the outside.


It was a hit with the family.
