Simple Smoked Meatloaf

I hate using frozen ground beef for burgers or meatloaf, but had no choice today as it was a last minute decision to make meatloaf and no decent store within 15 miles. Just used salt, pepper, onion, two eggs, crushed crackers, a bit of milk and some flour. I tried to not overwork it and turn it into a meat paste, so mixed just enough to form a loaf and in the smoke it went.
I had a container of brisket drippings from a smoke last week, so made a gravy to go over the mashed potatoes and meatloaf.
For breakfast I fixed homemade biscuits and Chocolate gravy, so I'm not about to get on the scales for at least a week!:D

I’d eat the crap out of that. Sounds like a good dinner idea this coming week
 
Would have never guessed that was a last minute fix if you wouldn't have mentioned it.

Picture of it looks really good. Just made my 1st meatloaf on the smoker a couple weeks ago. It turned out great. Yours does as well.

I kinda cheated a bit. I started it on the stick burner for flavor and smoke ring, then finished it in the pellet grill while I caught up on mowing. Been doing that a lot lately and it works well.
