The point! I just love these smaller cut of all the good stuff!
The usual trim the cap to allow for some salt penetration and a nice crust
The diced trimmings for rendering
Salted up and ready for a 36 hour stay in the garage fridge at 34 degrees
All dry brined up ready to season.....

On the RT at 265 for the smoke roasting magic!
Progress shot about 3 hours in....
6 hours in, INT 165, time to wrap...
ie pulled it at INT 200 and wood skewer probe tender....ie the meat Jello giggle
Just a simple plate with some scratch smoked gouda mac and some sweet corn.....just a splash of kinders gold bbq sauce cause it goes good with the mac!

Oh and what's beater than brisket and mac for dinner........ Well Brisket and fried mac for Breakfast!
