I haven’t done the full treatment on ribs for a while so wanted to do the full meal deal on the new 1250...

trimmed up a rack and saved the tips as well as a few pieces of pork butt that was getting vacuum sealed for the freezer. Did a light coat of yellow mustard then some pops sisco’s Arkansaw rub I got from from the Christmas exchange (thanks yankee2bbq yankee2bbq ) and in the 1250 @ 225

3 hours in!

wrapped them yup meat side down in a little bed of sweet baby rays bbq, with a splash of vinegar, brown sugar, and some crown maple syrup!

after 2 hours @225 I unwrapped them and they went back on!

I saved the liquid from the foil and after skimming the fat added a bit more maple syrup and then reduced to use as a glaze in 45 min in to the last hour.......making me hungry!

No Doubt, they are going to be great...JJ

LOVE the new 1250. It actually gives a better smoke profile over my old pellet!
