Sick-Day Beef Ribs

I've been battling a nasty head cold, and took off the past couple days from work. Feeling a little better today, thanks to my green tea with lemon & honey. But I can see my RecTeq from where my laptop is, and it's been calling me. So I thawed out some beef ribs. Package says spares, but they look more like back ribs to me.
Anyway, I'm trying out a RecTeq guided cook; "3 hours at 250°, then 30 minutes at 375°. Hit with sauce, and go another 5 minutes." No binder, just coated with BBQ Pit Boys "Big Texan" rub. Pellets are a hickory/maple blend, I think. I'm about an hour into phase 1. Temp outside is 49° and rainy. I have a small pan of apple juice for moisture. We'll see how it goes.

Ribs are all yours. That is a portion of the beef we just don't like.
 
Ok, so my first time using the RecTeq guided cook took me a little by surprise. It automatically bumped up the temp for the finish. Didn't see that coming. But overall, a success.
