Bought a Masterbuilt Pro Duel Fuel Two Door Smoker. Can burn wood chips or charcoal. The book says to load the pan with fuel of choice, in my case charcoal, get them white hot and place on stove bottom. What it does not say is if the gas burner should remain "ON" during the cooking process. I smoked some chicken and ribs the other day and used the gas burner on low through out the cook at about 225-250 degrees and added some coals and chunk wood in the process and meat came out fine. Any advice?? Thanks.
