rack of short ribs and few rib eye bones on the smoke....bones are on for 5hr cruise .....new keg of racer 5 has been tapped ...life is good

Sorry for the multiple pics as I kept getting error messages.....but my end results were good  !!!!!!   I used the 3-2-1 for the these and them came out flavor full , juicy and tender,,,,

They look awesome! What was your Kettle temperate at? I have done Short ribs at 225-245*F range and they have taken anywhere between 7-8 hours. Like 3-3-1, 3-3-2 to get tender...JJ
 
kettle temp was right  at  215 solid.....give or take..... on my kettle ive always cooked by feel and touch ...
 
i have added my location !!  And yes I am in northern calif and get 5 gal kegs ....I l;ove hoppy beers !!! My fav is Pliney the Elder from Russian River Brewery....

Since you have 3 taps I assume you are running 5 gallon cornys or torpedos?

I was just at Russian River brewery last week ...iIts only about 45 min from my house , so we try to get their once a month or so ...Any excuse to bring home a growler of Pliny...I love hoppy beers ...I keep  2   5gal kegs of commercial brew and 1 5 gal keg of my buddies home brew on tap  ... I try to keep  at least on double ipa  and one single ipa on tap at all times ....We have a lot of craft breweries here in the bay area , going to Laguanitas  tomorrow for  beer , food and music ,,,,I feel some Hop Stupid my be the order of the day tomorrow  And if by chance the kegs run dry i have   backup ..   Brad
