Christmas festivities with the family exacted a heavy toll on my snack stick inventory. Time to reload for New Year’s so decided to make 10 lbs of my current favorite, Owens Seven Pepper Using 80/20 GB. Added ECA @ 1 tsp/lb and 1 cup NFDM. Put in the Smokinator for 1 hr @ 120, 2 hrs @ 130, 2 hrs @ 140, 1 hr @ 160, then let it ride @ 170 until 154 IT. Used 100% Hickory pellets in the AMNPS after first hour. Rested in fridge over night before cutting and vacuum packing.
