Christmas festivities with the family exacted a heavy toll on my snack stick inventory. Time to reload for New Year’s so decided to make 10 lbs of my current favorite, Owens Seven Pepper Using 80/20 GB. Added ECA @ 1 tsp/lb and 1 cup NFDM. Put in the Smokinator for 1 hr @ 120, 2 hrs @ 130, 2 hrs @ 140, 1 hr @ 160, then let it ride @ 170 until 154 IT. Used 100% Hickory pellets in the AMNPS after first hour. Rested in fridge over night before cutting and vacuum packing.

And we’re off and running

Really like these stick mixes from Owens. Next batch will be their Chipotle Wildfire. Never made it before but I hear it’s good. Thanks for looking.

Yes, I store in the freezer after vacuum packing unless I’m going to eat them in the next week or two.
