I'm a recent proud owner of Todd's AMZN pellet smoker. I've used it to cold smoke cheese last weekend and I'm cold smoking some bacon tomorrow.

At this time I only have my weber kettle or weber genesis to use. The kettle is what I used for the cheese...and what I'll use for the bacon. I don't have a 'true' smoker yet...not one I like anyway.

So after the bacon is done, my next venture will be to hot smoke with this AMZN device. I'd like to do ribs, pork butts, etc. But I'm not sure what my grill set up should be.

Anyone use this device for hot smoking on a kettle or a genesis (or gas grill in general). My preference is to use the kettle. Any suggestions are appreciated...thanks!

Basically, keep your coals on one side and the Amnps on the other; don't keep them on the same side or the unit itself will heat up to the point it will ignite the pellets.

Thanks Pops...

I know Todd warns of the AMZN being directly above (would never do this anyway) or adjacent to the hot coals...and the need to build a heat shield between the heat and the device. I probably should've been more clear, but I was curious what sort of heat shields people have used for their kettle set-ups...and how much room was left for a foil water pan?

As you can tell from my questions, I'm new to smoking...at least on a kettle. For my anniversary, my wife said she was torn between getting me a smoker or a gas grill. She decided on the Weber Genesis. It's a good grill (as gas grills go...convenience and all that), but I would've preferred the smoker (Stumps Baby)...but she didn't ask...and I didn't want to hurt her feelings.

So I'm left with the kettle for smoking for now. My concern is how much room I'll have for food on the grill rack. I don't want the meat over the AMZN directly (heard this could be bad), and it obviously can't be cooked directly over the coals if low and slow is the desired result.

As far as meat over the AMNPS, a foil tent will keep the home fires (Pellets) burning and an open Vent under the AMNPS will provide Oxygen. For a heat shield a Smokenator may help...JJ
