Used the UDS with mesquite. 13 lb roast drum was holding @ 230 real well. Even thru a 1 inch rain downpour. Pulled off the drum when internal was 145. Sliced the next day. After the roast was done I put a bunch of burgers on. Everyone loved them.
No leftovers.
There was 2 inches of water in the drum when I pulled the burgers. I need a roof.

Thats on good looking roast there RW willy. I finally got tired of getting rained on too so I built the outdoor kitchen. Thats it below and I love it.
