I've only got a few smokes under my belt and am learning more each time. Better fire management is my current challenge.
I'm also looking for solutions for the small grease tray at the bottom of the smoker.
For my old dependable Weber Grill, I could find after market aluminum disposable insert trays to use with my grease tray. I haven't found something like this for the Oklahoma Joes smoker yet.
Of course, it's not a terrible challenge but I'm interested in what creative ways you've manage this on your smoker!
