I think I'm getting closer to finding what works for my ribs. The first time, I tried the "3-2-1" but the ribs were over-cooked for my liking. They weren't dry but they literally fell apart when I tried to get them off the smoker. This time I did a straight 5 hour smoke at 225 and never wrapped them. Also, I'm not a big sauce/condiment guy but my wife loves BBQ sauce on her ribs so I worked out a compromise. At the 4 hour mark, I began applying thin coats of a tomato based BBQ sauce every 20 minutes. Three layers over an hour worked great. There was enough sauce to make the wife happy but they weren't "wet" by any means. The sauce was set and only slightly sticky but added a hint of sweetness to the ribs. 

All rubbed up and preparing for a 24 hour nap in the fridge.


Awake from the nap and read for a trip to the Woodwind smoker.


After 5 hours and three thin layers of glaze/sauce. They may look wet but they weren't. Just shiny sticky mahogany deliciousness.


Good smoke and plenty moist. You can see by the white cutting board that while these ribs may look wet, the lack of sauce on the cutting board proves they aren't.

Nice lookin ribs! Love the nice bark and outer skin you get when skipping the wrap! Looks like just the right amount of saucing from here!  

How was the texture and bite this time?

Texture was great! They had a great chew and were just shy of breaking apart. You had to actually bite the ribs but the bite went to the bone and the bone was clean afterward.
