Good Afternoon all!
I purchased a MES 30" about 6mo ago and just got the MES 40" from Academy's BF sale. This thing dwarfs the 30"! Can't wait to get to cookin'!
I've smoked about 5 briskets, a pork butt, about 20 racks of ribs (my favorite), turkey legs, chicken legs and a batch of wings in my 30". Always had to trim the brisket and ribs to get them to fit or fold it over a bit. I'm glad I do not have to do that any longer!
Anyway... I'm from SE Houston, TX. Loved great BBQ and decided it was time for me to start making it for myself. The only downside, restaurant smoked BBQ isn't good any more. Even Papa's BBQ is just okay.
I've google'd for recopies and tips and always found myself here... so I decided to make an account and contribute the little knowledge I've acquired in the short period of smoking.

Welcome to the forum, Pedro. I have the MES 30 and a Bradley. It’s amazing the goodness an electrified box can supply.
