Second Butt turned into Hot Link mix

So I got 2 Butts in the package. 15 lbs total and after de-boning and trimming away the nasty stuff I got a pretty good yield (I think) of 6lbs of Andouille and 7 lbs of hot link mix ready to stuff.

Both are in the fridge resting overnight and I will stuff and smoke em tomorrow. I'll try a bit in a pan to see if all is tasty and if all is good I will post the recipes that I formulated. I am keeping a journal so I know just how much of everything I used. [emoji]128522[/emoji]

The smell on both is amazing.....can't wait to get to the eating part.....although I know that's a little ways off.

 
Lookin good Pman! Anxious to see how it all turns out, but I'll have to see it when I return from my family fishing trip. Just keep every thing COLD and you will be fine. I like to put the second grind through when I can see ice crystals in the mix and the individual pieces are hard. Break them up a little and drop in the grinder-no need for the stuffing plunger.

Also-don't over fill the casing if you plan on twisting into links. Takes some practice to do this by feel, but you will get the hang of it.
