Home is Glendale, AZ.
I have done the search on SMF and found lots of information and tips on seasoning.

Wash, rinse, dry, spray Pam or wipe down with vegetable oil and burn off...

Most state a temp of 300 to burn the oil or it will just get sticky or gummy and be a problem down the road.

So MES only goes to 275? Would I just set it and let 'er go at that temp for 2-3 hours and add chips at the end?

I have already burned it off for 3 hours on high setting but did not add oil.

I have found no reason to oil the walls of the MES and no where in the manual does it tell you to oil the walls. If you had some barrel smoker with bare steel, oil seasons against rust. This is not an issue with the stainless interior of the MES. Burn it off at 275° a couple hours then get some smoke in there a couple more and smoke some meat...JJ
