Yessir - that looks top notch.
I did 24oz of air fryer schnitz for my birthday last week. I got 2 slabs of this (pic below) at my Kroger affiliate on clearance for 6.99/24oz and when I busted into them one of them was almost pure lean with thin fat marbling (I was quite impressed) and I didn't just want to grind them up with pork loin for breakfast sausage (which was my intention) so I sliced it and thought about frying it like a chop. But man it's been hot and I'm terribly overworked so I was thinking how could I enjoy this without heating up the skillet full o grease? My eyes fell upon the breadcrumbs that have been sitting in the pantry since Moses was a infant, and I suddenly wanted schnitzel. It was delicious. I ended up eating the last few slices on a hamburger bun with tomato and mayo - and it was epic.
These are normally 9.99 which ain't bad and I will definitely be treating myself to a few here and there, seeing as how regular bellies are right at $6/lb now, it's a heckuva bargain. If I get another 90/10 like that one I'm either frying it or schnitzling it. Bonus points for it being Duroc.
