There is a season (Turn, Turn, Turn)

A time to be born, a time to die
A time to plant, a time to reap
A time to kill, a time to heal
A time to laugh, a time to weep.


Inspired by my Son-outlaw...oops I meant my Son-in-law, Josh, I decided to try my hand at stuffing a pork loin in memory of Gary/Scarbelly and in honor of Burton

Saw these Poblano at the store and thought I'd try them


Sauteing the stuffing: Peppers, onions, pork sausage, mushrooms and seasonings


Pork loin all fillet/butterflied out. Thanks Josh, for teaching this old dog a new trick


Stuffing in, topped with shredded cheese and baby spinach


All rolled up and tied. Again Josh taught me the easy and neat way of doing this


Had extra stuffing left so I thought, what the hay, stuff some peppers..


Into the smoker they go, about 250*



A little heavy on the smoke, but I wanted to make sure it reached up to Scar in heaven and to Burton 600+ miles away


All plated up with red skinned,garlic mashed taters, cottage cheese, herb and garlic biscuits

Time to eat....
