SBT, ABT and twice smoked potatoes.

Since I ran out of shrimp yesterday I made ABT’s and SBT’s with pulled pork, pineapple, BBQ sauce, and cheese. I wrapped them in slightly microwaved bacon with a sprinkle of rub. They are kind of like the Hawaiian fatties stuffing. I hope they work out well. I am making these for the Giants vs. Bills game. I have a bunch of pulled chicken and pulled pork from yesterday so maybe burritos or sammies.

I wrapped with bacon that I nuked for a little while so it may get cooked better and then hit them with a little rub. They are in the smoke.

The cheese is cream cheese with shredded cheddar.

Looks great!! We use pulled pork all the time for ABT's and the whimpy ones too..

Hdflame I used some scallions instead of jalapeno but the rest is the same. Here is a link to Jeff’s recipe.

Ingredients

 6 baking potatoes

 1-½ cups grated Cheddar or Cheddar/Monterey Jack mix

 4 jalapeños, cleaned, deseeded and diced

 4 oz cream cheese, softened

 ½ stick (1/8 lb) real butter, softened

 1 TBS of my rub

 6-8 slices of bacon, fried and crumbled

 ½ cup heavy whipping cream (milk will also work but I like the richer flavor of the cream)
